Char Siu Bao (BBQ Pork Buns)

Ingredients

  • 1 lb char siu pork, diced small (store-bought or homemade)
  • 2 tbsp hoisin sauce
  • 1 tbsp oyster sauce
  • 1 tsp cannabis-infused coconut oil
  • 1 tbsp sugar
  • 1 tsp sesame oil
  • 2 cups bao flour (low-gluten wheat + cornstarch)
  • 1 tsp instant yeast
  • ¾ cup warm water
  • 2 tbsp sugar for dough

How to make it

    Mix bao flour, yeast, 2 tbsp sugar, and warm water. Knead 10 minutes until smooth. Rest 1 hour.

    Warm diced char siu with hoisin, oyster sauce, sugar, sesame oil, and cannabis coconut oil until glazed.

    Cool filling completely.

    Divide dough into 12 pieces. Roll each into a 4-inch circle.

    Place a tablespoon of filling in the center. Pleat and twist to seal.

    Rest buns 20 minutes. Steam over high heat for 12 minutes.

    Let stand 2 minutes before opening the steamer (prevents collapse).

  • Use bao-specific flour for that cloud-like texture.
  • Don't open the steamer early — thermal shock deflates buns.
  • Leftover filling makes an excellent fried rice addition.
