
Coq au Vin with Cannabis Herb Oil

Ingredients
- 3 lbs bone-in chicken thighs and drumsticks
- 4 oz lardons or thick-cut bacon, diced
- 1 bottle Burgundy red wine
- 2 cups chicken stock
- 8 oz cremini mushrooms, quartered
- 12 pearl onions, peeled
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 2 sprigs fresh thyme, 2 bay leaves
- 2 tbsp cannabis-infused herb oil
- Fresh parsley for garnish
How to make it

Brown chicken pieces in rendered lardon fat. Set aside.

Sauté mushrooms and pearl onions until golden. Remove.

Cook garlic and tomato paste 1 minute. Deglaze with wine.

Return chicken, add stock, thyme, and bay leaves. Cover.
