Wild Mushroom & Truffle Risotto

Ingredients

  • 1 1/2 cups arborio rice
  • 1 lb mixed mushrooms (cremini, shiitake, oyster), sliced
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 6 cups warm vegetable or chicken stock
  • 1/2 cup dry white wine
  • 3 tbsp regular butter
  • 4 tbsp cannabis-infused butter (~5mg THC per tbsp)
  • 1 cup grated parmesan, plus more to serve
  • 2 tbsp fresh thyme leaves
  • 1 tbsp white truffle oil
  • Salt and freshly ground pepper

How to make it

  1. 1

    In a wide pan, melt 1 tbsp regular butter and sauté mushrooms over high heat until deeply golden; set aside.

    In the same pan, melt remaining regular butter, then sweat onion until translucent, 4 minutes.

    Add rice and toast 2 minutes, stirring. Pour in wine; let it absorb.

    Add warm stock one ladle at a time, stirring frequently, allowing each addition to absorb before adding the next (about 22 minutes total).

    When rice is al dente, return mushrooms to the pan with garlic and thyme. Stir 1 minute.

    Remove pan from heat. Stir in parmesan, then the cannabis-infused butter and truffle oil until silky.

    Plate, finish with extra parmesan and a few drops of truffle oil.

  • For extra depth, soak 1/4 oz dried porcini in the stock first.
