
Phở with Cannabis-Infused Broth

Ingredients
- 3 lbs beef bones (knuckle and marrow)
- 1 lb beef brisket
- 1 onion, halved and charred
- 4-inch ginger, halved and charred
- 3 star anise
- 1 cinnamon stick
- 4 cloves
- 1 tbsp fish sauce
- 1 lb fresh rice noodles (bánh phở)
- 6 oz eye of round, sliced paper-thin
- 1 tsp cannabis-infused oil per bowl
- Bean sprouts, Thai basil, lime, hoisin, sriracha
How to make it

Blanch bones in boiling water 5 minutes. Drain and rinse.

Char onion and ginger under the broiler until blackened.

Simmer bones, brisket, charred aromatics, star anise, cinnamon, and cloves in 4 quarts water for 3 hours.

Strain broth. Season with fish sauce and sugar to taste.

Lay raw beef slices over noodles. Pour boiling broth over — the heat cooks the beef.
