
Thyme & Sage Roasted Chicken
Golden roast chicken rubbed with herb butter under the skin and finished with infused pan-jus. Deeply herbal, deeply pinene.
Ingredients
- 1 (4 lb) whole chicken, patted dry
- 4 tbsp regular butter, softened
- 4 tbsp cannabis-infused butter, softened (~5mg THC per tbsp)
- 3 tbsp fresh thyme leaves
- 2 tbsp fresh sage, chopped
- 4 cloves garlic, grated
- 1 lemon, halved
- 1 tbsp olive oil
- Salt and freshly ground pepper
- 1 cup chicken stock
How to make it

Preheat oven to 425°F (220°C). Season the chicken cavity with salt and pepper; stuff with lemon halves and a few thyme sprigs.

Mash regular butter with thyme, sage, and garlic. Loosen the skin over the breasts and thighs and slide the herb butter underneath.

Rub olive oil over the outside; season generously with salt and pepper.

Roast 60–70 minutes until internal temperature reaches 165°F (74°C) at the thigh.

Rest the chicken 10–15 minutes on a board. Pour pan juices into a small saucepan and gently warm.

Off the heat, whisk cannabis-infused butter into the warm pan juices to make an infused jus.

Carve and spoon infused jus over each portion at the table.
Cooking tips
- The infused butter goes only into the off-heat pan jus—never into the oven—to protect THC.

- Save the carcass: it makes a beautiful stock for next-week's risotto.
