Ingredients

  • 1 lb cavatappi or elbow macaroni
  • 3 tbsp cannabis-infused butter (~30mg THC total / ~5mg per serving)
  • 3 tbsp regular butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk, warmed
  • 1 cup heavy cream
  • 2 cups sharp cheddar, shredded
  • 1 cup gruyère, shredded
  • 1/2 cup parmesan, grated
  • 1 tbsp truffle oil
  • 1 cup panko breadcrumbs
  • Salt, white pepper, freshly grated nutmeg

How to make it

    Cook pasta 1 minute shy of al dente, drain and set aside.

    In a large saucepan, melt regular butter over medium heat, whisk in flour, and cook 1 minute to form a roux.

    Slowly whisk in warm milk and cream, simmer until thickened (about 5 minutes). Season with salt, white pepper, and nutmeg.

    Off the heat, stir in cheddar, gruyère, and half the parmesan until smooth.

    Stir in cannabis-infused butter and truffle oil only after the pan is off the heat to preserve potency.

    Fold pasta into the cheese sauce and transfer to a buttered baking dish.

    Top with panko mixed with the remaining parmesan and bake at 375°F (190°C) for 18–20 minutes until golden and bubbling.
